Do you not like crispy cutlet? Seriously? Are you out of your mind? Hey!! Then what are you doing here? Ohhh! Are you vegetarian? Don’t worry, you can make this special crispy cutlet without egg too. Though being non-vegetarian, I prefer to add eggs what makes cutlet crispier & mouthwatering but still, you can avoid eggs and make it enjoyable.
Though, sometimes it becomes hard to understand which one is kabab and which one is a cutlet. Both of those can be prepared with veg as well as non-veg items. I mean you can say if it non-veg then it is this otherwise that. Both of those snacks look similar.
Then how do you identify that you are eating kabab or cutlet? Haha!!
As per my understanding, kebab is either grilled or shallow frying so usage of oil is very less for kebab preparation as compared to cutlet because cutlets are mostly deep frying. Is it not true?
Then batter or coating prepared with eggs, corn flour, breadcrumbs, besan etc are not used in kebab preparation whereas cutlets are always prepared with a coating of batter then fried. Is it not true?
But still, apart from that, I ate kebab which is deep-fried and also ate kebab with a batter coating. Haha!!
So I believe when we are served (or prepared) shish kebab (shik kebab) then actually we do not have doubt that it is a kebab.

Special crispy cutlet recipe
- 2 medium size boiled potatoes
- ⅓ cup green peas paste
- ⅓ cup cauliflower paste
- 4-5 green onions, cut into small pieces
- ½ cup breadcrumbs
- 1.5 teaspoons ginger paste
- ½ teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 1 teaspoon aamchur (dry mango powder)
- 1 teaspoon chaat masala
- 1 teaspoon red chilli powder
- Salt as needed
- 2 eggs
- ½ cup breadcrumbs
- Salt as needed
- Refined oil for frying
- Salt as needed
- Take all stuffing items in a large bowl and mix all properly
- Now prepare 9 balls from that mixture
- Then flattened each of those balls by using fingers
- Now take both eggs in a bowl, add pinches of salt and blend both of its egg white & yolk
- Take each stuffing item one by one then dip into eggs
- Now put it into breadcrumbs and coated your raw cutlet in breadcrumbs properly (you can repeat it again and apply double coat if you want to make it crispier)
- Heat oil in a kadai (cooking pot) and fry all cutlet in multiple batches
- Serve this with tomato sauce or schezwan sauce and salad
How to make winter special crispy cutlet at home?
Take boiled potatoes, green peas paste, cauliflower paste, chopped green onions, breadcrumbs, ginger paste, cumin powder, coriander powder, garam masala, aamchur (dry mango powder), chaat masala, red chilli powder, salt in a bowl and mix all together and make a big size dough. Now make 9-10 small balls from that dough
Press each ball with your finger to flatten and try to give those a circular shape (or any other shape of your choice).
Now blend two eggs with salt as needed and dip those balls into the blended eggs and then apply breadcrumbs all the raw cutlets. You can repeat these two steps twice if you want to apply double coating.
Now fry each of those raw cutlets into multiple batches. Cook both sides of each cutlet. Now your winter special crispy cutlets are ready to serve.
I like to have those cutlets along with schezwan sauce and salad. Cutlets and masala tea are also a perfect snack for an evening during winter.
