Salad is always preferable as it is mostly a healthy dish. But salad means, unfortunately, we generally understand seasonal vegetables (that too very particular vegetables only) with just salt & lemon juice. Sometimes we also avoid lemon juice to add. In India, it is considered as a side dish with other main course meals. Mostly they make a salad dish with cucumber, tomato & onion. But there is no harm if you also try something more delicious and healthy vegetables & spices 😀 . So check this vegetable salad recipe with curd, honey and spices dressing for a nice vegetable salad.
This vegetable salad will taste both & sweet. You can also spread some pinch of chaat masala to over this vegetable salad. But it is optional.
- For salad dressing :
- Curd – ½ cup
- Honey – 2 tsp
- Vegetable oil – 2 tsp
- Black pepper – 1 tsp
- Lemon juice – 1 tsp
- Red chili powder – 1 tsp
- Salt – as needed
- For vegetable salad base :
- Cucumber – 1 small size
- Tomato – 1 large size
- Onion – 1 medium size
- Carrot / gajar – 1 small size
- White chickpeas – ½ cup
- Take all finely chopped vegetables (cucumber, tomato, onion, carrot) in a big bowl.
- Add white chickpeas (soak white chickpeas in water for 6-7 hours before adding) in that bowl too. Mix those well
- Take all ingredients for making salad dressing (curd, honey, vegetable oil, black pepper, salt, lemon juice, red chili powder) in a small bowl. Mix these with a hand blender.
- Pour salad dressing over vegetable salad base add mix well
- Serve it for lunch or dinner

For salad dressing :
- Curd / dahi – 1/2 cup
- Honey – 2 tsp
- Vegetable oil – 2 tsp

- Red chili powder / lal mirch powder – 1 tsp
- Salt – as needed
For vegetable salad base :
- Cucumber – 1 small size
- Tomato – 1 large size
- Onion – 1 medium size
- Carrot / gajar – 1 small size
- White chickpeas / Punjabi chhole – 1/2 cup
Steps to follow
- Clean white chickpeas and soak white in water for 6-7 hours
- Clean all fresh vegetables properly and chop all those vegetables to make salad base
- Take all finely chopped vegetables (cucumber, tomato, onion, carrot) in a big bowl.
- Add white chickpeas in that bowl too. Mix those well
- Salad dressing preparation: take all ingredients (curd, honey, vegetable oil, black pepper, salt, lemon juice, red chilli powder) in a small bowl and mix with a hand blender.
- Pour salad dressing over vegetable salad base add mix well
- Serve it as a side dish for lunch or dinner.
