Aloo jeera
It is a simple vegetarian dish. But surprisingly super delicious. You can make this food within a few minutes if you have boiled potatoes. The strong flavor of cumin seeds & ginger make it mouthwatering. I never tried this till I shifted to New Delhi. I underestimated this dish. But my friends told me to try for once. It was 2007, after that, I became addicted to this simple dish. You will always find this low priced dish in any roadside dhaba as well as a decent air-conditioned restaurant in any Northern Indian state.

Baingan ka bharta
Being a Bengali, I tried mashed roasted brinjal/eggplant. But it is different because you need to cook it after roasting in the fire. The flavor of roasted brinjal makes this dish so special. It is spicy, easy to cook, flavorful & hot North Indian dish. Actually not just North India, it is also popular in Rajasthan, Gujarat & Bihar too. It tastes so good when served with chapati. You can also try it with bajre ke roti.
Mixed saag (5 types of leafy vegetables made curry)
Mixed saag is my favorite all-season saag. Though I mostly prefer spinach, mustard greens etc to make this mixed saag. But anybody can mix his own preferred leafy vegetables to make this dish. It is healthy. It may look time taking dish but this mixed saag won’t take too much time from your busy life. It is an excellent veg side dish for chapati or roti.

Bhindi masala (Dry)
I like bhindi masala since my childhood. But this summer, I am harvesting 30-50 pieces of okra (lady’s finger) every week. So it became a common dish in our meal. You can make different types of bhindi masala according to your taste. But I love my version. It is simple but tasty. It is a delicious side dish for chapati.
