This sweet dish is popular in many states of India. It is often prepared for various occasion & festivals. Rice kheer is a delicious Indian sweet dish. Yo do not need to add so many spices. It’s very simple and preparation time is negligible that means anybody can make it whenever he or she wants. So try this rice kheer recipe at home if you are interested to make a sweet dish and surprise someone.
In Bengal it is known as chaler payes. Chal means rice and payes means kheer. That is why it is called as chaler payes.
People like to have this hot and sometime it is preferred to have cold. So you can try this rice kheer recipe and serve this hot or cold. Some people keep it in refrigerator and enjoy rice kheer for two three days. So if you like rice kheer very much then make adequate quantity and have it any time for next few days.
- Govindobhog rice – ½ cup
- Milk – 1 litre
- Sugar – ⅔ cup
- Cashew nuts – 25 gm
- Raisins – 20 gm
- Cardamoms – 4-5
- Bay leaves – 2
- Wash basmati rice in water properly
- Heat a cooking pot to boil milk and allow it to boil 5 minutes
- Now add basmati rice to milk & stir this very well and boil for another few minutes
- Now add sugar to milk and mix it in milk properly
- Now take cardamoms and bay leaves and add it to milk,
- Now boil this till kheer becomes thicker
- Once it becomes as thick as you want, then add cashew nuts and raisins and mix those properly within kheer
- Now switch off flame and pour kheer in some serving bowls

Ingredients
- Govindobhog rice – 1/2 cup
- Milk – 1 litre
- Sugar – 2/3 cup
- Cashew nuts – 25 gm
- Kishmish / raisins – 20 gm
- Cardamoms / elaichi – 4-5
- Bay leaves – 2
Method
- Wash rice in water properly but do not let rice grains absorb water
- Heat a wide pan or any other cooking pot to boil milk and allow it to boil 5 minutes
- Now add rice to milk & stir this very well and boil it in medium flame for another 10 minutes
- Now add sugar / sakkar to milk and mix it in milk properly
- Now take cardamoms and bay leaves and add it to milk, now you will start getting beautiful aroma
- Now boil this till kheer becomes thicker and check it accordingly
- Once it becomes as thick as you want, then add cashew nuts and raisins and mix those properly within kheer
- Now switch off flame and keep kheer in some serving bowls
Additional tips
⇒ You can use mortar & pestle to crush cardamoms, so that its flavor can mix with rice & milk and you can get wonderful aroma
⇒ Soak raisins in water for 1 hour before adding to kheer, you can roast cashew nuts and add to kheer
⇒ In Bengal special Govivndo bhog chawal / rice is used to make rice kheer
⇒ You should use full cream milk to make it more delicious
