Simple ragda patties chaat recipe

Ragda patties chaat! Hmmm! Actually, there were so many unknown street food what probably I would never know and won’t become street food lover if you would not come to Mumbai. I stayed in North India for years but there I hardly found anything what I never heard. Well, there are many dishes what I tasted for the first time in my whole life but I had heard about those dishes. But when I came to Mumbai then I tried dabeli, sabudana khichdi, sabudana vada, ragda patties, vada pav, pav bhaji, Bombay sandwich and many more. Some of those I never knew before I went there.

I am also sure that if you are not Marathi and never went to Mumbai then there are also some unknown snack for you in that above-mentioned list. I knew that people also love chakli pav. There was a roadside stall at Powai where I saw kids were buying chakli pav. Now, what is chakli? Then see, it is another unknown snack for you.

Okay, lets talk about ragda patties (or ragada pattice). Ragda is just like ghugni but less spicy than Bengali style ghugni. Pattice or patties is just simple mashed potato made & a shallow fried item. Both are served together along with various chatni, farsan/sev, raw onion, raw tomato, spices, curd etc. There is no restriction on how it will be served. Some people do not like raw finely chopped tomato or onion whereas some people will never go with curd/yogurt. But like to have this with homemade curd instead of adding those green chutney (coriander, mint, ginger & green chilli made sauce) and sweet red colored chutney (dates, tamarind and jaggery etc made sauce).

I often make this ragda patties chaat for my dinner. Yes, I love to have this as my dinner. So I keep it less spicy and prefer curd instead of various chutney. Most people call it just ragada pattice but it is actually a chaat which is served with various spices and chutneys. Actually, people who stayed in Delhi will definitely say this is ragda patties chaat.

Ingredients
For preparing ragda/ragada
  • 1 cup sun dried peas
  • 1.5 teaspoons turmeric powder
  • 1 medium size tomato, chopped into small pieces
  • Salt as needed
  • 1.5 cup water
For patties/pattice/petis preparation
  • 4 big size potatoes
  • 2 teaspoons roasted cumin powder
  • 1 teaspoon red chilli powder
  • ½ teaspoon garam masala
  • 1 teaspoon chaat masala
  • ½ tablespoon corn flour
  • Salt as needed
  • 1 tablespoon vegetable oil
For serving
  • 1 cup curd
  • Pinches of roasted cumin powder
  • Pinches of chaat masala
  • Pinches of back salt
  • Finely chopped mint & coriander leaves
  • Handful sev/farsan
  • 2 onion, finely chopped
Instructions
Ragda preparation
  1. Soak sun dried peas for overnight and drain water and take sun dried peas (whole matar) in a pressure cooker, pour 1.5 cups water, turmeric powder, finely chopped tomato, salt and cook till 3 whistles then keep it over low flame for next 10 minutes
Patties/pattice/petis preparation
  1. Take 4 boiled potatoes, mash those
  2. Now add roasted cumin powder, red chilli powder, garam masala, chaat masala, corn flour and salt then mix all
  3. Now make 6-7 small ball with that spicy mashed potatoes, then take one ball and press it with both palms of your hands
  4. Now shallow fry those patties with vegetable oil in a cooking pan
Serving ragda patties chaat
  1. Take two full spoons ragda in a plate, place two patties then add curd on the opposite side of ragda
  2. Then spread all spices, salt, finely chopped coriander leaves & mint leaves, finely chopped raw onion and finally spread sev/farsan over the ragda pattice
Notes
If you do not want to add curd then instead of adding curd you can add green chutney & red chutney
If curd is very thick then add little water to make it thin
