Mix vegetable sambar recipe – Try this delicious dish at home

Mix vegetable sambar is a popular south Indian dish. You can have this with dosa, idli, uthapam etc. Most interesting thing is that you can make this dish with any seasonal vegetable what you like. So try this recipe at home and suprise others.

If you do not want to make sambar powder at home then you can purchase it from local shop and make mix vegetable sambar at home. It can be enjoyed with plain rice too.

Dosa, idli with this dish are very healthy and popular breakfast too. Nowadays it is preferred across India. If you want to have other healthy breakfast like sooji / rava upma or dahi vada at home then try those recipes too.

Ingredients
  • Arhar / toor dal / pigeon pea lentils – 100 gm
  • Imli / tamarind water – according to taste
  • Turmeric powder / haldi – 1 tsp
  • Sambar powder / sambar masala – 1 tbsp
  • Red chili powder /lal mirch – 1.5 tsp
  • Green chilies / hara mirch – 2
  • Seasonal vegetables
  • Sunflower oil – 1 tbsp
  • Mustard / sarsho seed – 1 tsp
  • Hing / asafoetida – ½ tsp
  • Curry leaves / kadi patta – 6-7 leaves
Instructions
  1. Add dal , imli / tamarind water, turmeric / haldi powder, red chili powder, green chilies, sambar powder, oil (2 tsp) in pressure cooker and also add sufficient water to pressure cook all ingredients
  2. Wait till 3-4 whistles and switch off the flame to let pressure cooker cool and release pressure
  3. Now open cover of pressure cooker and add all vegetables and heat pressure cooker again
  4. Boil it for 12-15 minutes and then take all in a bowl
  5. Now add sunflower oil in a cooking pan and heat it
  6. Add mustard / sarsho seeds, red chilies / lal mirch, hing & curry leaves / kadi patta and pour it in sambar gravy
  7. Serve it hot or warm

Ingredientsmix vegetable sambar

  • Mustard seed – 1 tsp
  • Hing / asafoetida – 1/2 tsp
  • Curry leaves / kadi patta – 6-7 leaves

Instructions

  • Add dal / lentils, imli water, turmeric powder, red chili powder, green chilies, sambar powder, oil (2 tsp) in pressure cooker and also add sufficient water to pressure cook all ingredients

  • Boil it for 12-15 minutes and then take all in a serving bowl
  • Now in a cooking pot or pan, add sunflower oil and heat it
  • Add mustard seeds, red chilies, hing & curry leaves and pour it in sambar
  • Serve it hot or warm

⇒ You can use any kind of seasonal vegetable to make mix vegetable sambar. Here I have used parwal / pointed gourd, kaddoo / pumpkin, amaranth, beans, tomato, potato etc

⇒ If you have added hing when in sambar powder then use hing or asafoetida accordingly as too much hing can spoil the taste of your mix vegetable sambar.

⇒ You can add few whole roasted chana dal in sambar if you have not added chana dal powder in sambar powder but it is absolutely optional.
