Mix vegetable is a popular vegetable dish. In north India it is very famous but people very often make this item. Though here it is little bit different. If you are getting bored with same mix vegetable dish then you can try this one too. This mix vegetable recipe is also a simple one. If you are a newbie cook then try this at home.
You are free to add any seasonal vegetables what you like. You can add some small paneer cubes too. But do not fry vegetable or paneer cubes too much.

You can have this with chapati / tawa roti or even rice too.
- Vegetables (Beans – 4-5, Carrot / gajar -1, Tomato – 2 medium size, Potato / aloo – 1 medium, Pumpkin / kaddoo – 100 gm, Pointed gourd / parwal – 4-5, Brinjal / bengan – 1 small size, Amaranth – 3-4)
- Ginger – 2 tsp
- methi – ½ tsp
- coriander seeds – ½ tsp
- cumin seeds – ½ tsp,
- mustard seeds – ½ tsp,
- black cumin seeds – ½ tsp)
- Red chilies -2
- Turmeric powder – 1 tsp
- Oil – 1.5 tbsp
- Salt - according to taste
- Water – 2.5 cup
- First heat oil in a kadai and add ginger paste and then red chilies
- Now add all whole spices and let those start cracking
- Add potatoes and fry for 2 minutes and now add all other vegetables & salt and cook well
- Add turmeric powder, mix all vegetables and spices properly
- When all vegetables become soften, add water to boil all vegetables
- Boil those for 15 minutes and when it becomes dry then switch off flame
- Take mix vegetable in a serving bowl and serve warm

- Now add oil and then add all whole spices and let those start cracking
- Add potatoes and fry for 2 minutes and now add all other ingredients & salt and cook well
- Add turmeric powder, mix all vegetables and spices properly
- When all vegetables become soften and release water, then add water to boil all vegetables
- Boil those for 15 minutes and when it becomes dry then switch off flame
- Take mix vegetable in a serving bowl and serve warm
