Elephant yam or suran curry is a favorite dish of many people. Some people prefer to make it like meat curry. Vegetarians like it most. This vegetable looks like elephant foot that is why it is called as elephant foot yam (suran in hindi). Have you ever tried this vegetable? Here this is a nice dish of this vegetable. - Elephant foot yam – 350 gm
- Tomato – 1 large size
- Onion – 2 medium size
- Ginger – 2 tsp (paste)
- Garlic – 1 tsp (paste)
- Garam masala- 1 tsp
- Red chili powder – 1 tsp
- Turmenric powder – 1 tsp
- Lemon juice – 1 tsp
- Sunflower oil – 1.5 tbsp
- Salt – according to taste
- Water – as needed
- Peel skin of elephant yam and cut into small cubes and add 2 cup water, 1 tsp salt and pressure cook all elephant yam pieces till 1-2 whistles, switch off flame and drain water
- Now heat oil in frying pan and add finely chopped onion and cook for 2-3 minutes
- Now add ginger and garlic paste to saute it in pan, mix it with onion and cook well. Add salt also as needed.
- Now add red chili powder & turmeric powder and mix properly
- Now add tomato and and cook, till it released oil
- Now add boiled elephant yam cubes and mix with gravy. Mix it properly. Cook for 5-6 minutes and add lemon juice and garama masala too.
- Now add water and let it start boiling and let reduce its volume to half.
- Switch off oven and take it in a serving bowl and serve it hot with roti or rice.

Ingredients
- Elephant foot yam / suran / jimikand / ol – 350 gm
- Tomato / tamator – 1 large size
- Onion / pyaz – 2 medium size
- Ginger / adrak – 2 tsp (paste)
- Garlic / lahsun – 1 tsp (paste)
- Garam masala- 1 tsp
- Red chili powder / lal mirch powder – 1 tsp
- Turmenric powder / haldi powder – 1 tsp
- Lemon juice / nimbu – 1 tsp
- Sunflower oil – 1.5 tbsp
- Salt / namak – according to taste
- Water – as needed
Steps to follow
- Peel skin of elephant yam or suran and cut into small cubes and add 2 cup water, 1 tsp salt and pressure cook all elephant yam (suran) pieces till 1-2 whistles, switch off flame and wait till it release pressure, so that you can open pressure cooker and drain water
- Now heat oil in frying pan and add finely chopped onion and cook it till its color changed to light brown
- Now add ginger (adrak) and garlic paste to saute it in pan, mix it with onion and cook well as it is the base of gravy. If you over cook or under cook these ingredients then it will not taste good. Add salt also as needed.
- Now add all spices (red chili powder & turmeric powder) and mix well and let color of gravy be changed
- Once you added spices, now time to add tomato and it will make gravy thick & juicy, so cook well, till it released oil
- Now add boiled elephant yam cubes and mix with gravy. Mix it properly so that yam or suran extracts the flavor of gravy and make it a delicious dish. Cook for 5-6 minutes and add lemon juice & garama masala too.
- Now add 2 cups of water and let it start boiling and let reduce its volume to half.
- Switch off oven and take it in a serving bowl and serve elephant yam hot with roti or rice.
