This simplest deep-fried vegan pastry was favorite since my childhood. My mother used to make it for us. It was so delicious and mostly during weekends or holiday it used to be prepared. After so many years, still it is one of my favorite evening snacks. Sometimes I prefer this as my Sunday breakfast. If you think that pastry is difficult to make at home then you can try this Bengali style homemade pastry. It is not just simple but also more delicious than any other pastry bought from a popular restaurant in your locality.
I wrote this draft almost 6 months ago. I helped my mom last year December to make this awesome simplest deep-fried vegan pastry that too with my favorite vegetables. I suddenly noticed that this recipe was already written but do not why I did not share with you. So I started searches for pictures of that vegan pastry in my computer. I found a few pictures in December 2018 folder. But I did not find any pictures of preparing that filling stuff. So for now I am sharing only two pictures of that snack. Very soon I will share some more pictures when next time I will make the simplest vegan pastry.

Deep fried vegan pastry recipe
- 1.5 cups all purpose flour
- 2 teaspoon vegetable oil
- Salt as needed
- Water as needed to make dough
- ⅓ cup beetroot cubes, small size
- ⅓ cup carrot cubes, small sized
- ⅓ cup green peas
- ½ cup potato cubes, small size
- ½ cup cauliflower florets, optional
- ⅓ cup roasted peanuts
- 2 green chillies, finely chopped
- 1.5 teaspoon grated ginger
- 2 teaspoons ajwain
- 1 teaspoon red chilli powder
- Salt as needed
- 1 tablespoons oil
- Enough vegetable oil for deep frying those vegan pastry
- Take all purpose flour in a big bowl, add vegetable oil & salt then mix all
- Now add ½ cup water and knead to make soft dough and more water if needed
- Then make 7-8 small balls with that dough
- Heat oil in a cooking pan, add ajwain, green chillies and grated ginger and saute for a minute
- Now add small potatoes cubes & cauliflower floret pieces and cook over low flame for 5 minutes
- Then add red chilli powder, salt and all other vegetables (beetroot cubes, carrot pieces, green peas) and cover the pan with lid, cook for another 7-8 minutes over a low flame and stir after each 2-3 minutes, finally switch of flame
- Now add roasted peanuts and mix
- Roll a small dough made ball and give a circular flat shape
- Now add a full spoon cooked vegetable on that and close it to give semi circle and press each corner so that vegetable would not come out during deep frying
- Repeat it for all those dough made small balls to fill cooked vegetables
- Heat enough vegetable oil in a cooking sauce pan and deep fry all one by one
