Soy milk is not a popular drink in India. I think many people did not even hear about this drink. Though it is just a drink prepared with extracts from soy beans but still it is called as vegan milk as it looks like milk. Not only that, it is also very very nutritious & delicious. You can even make cottage cheese (vegan paneer) from this milk after coagulation just like any normal animal milk. I have drink soy milk several times in my life. But it was my second time when I prepared soy milk at home. So this time, I made homemade vanilla soy milk and I used dates as a sweetener agent in this vegan milk.
I drank many litres of flavored soy milk from different stalls. But I did not try homemade flavored vegan milk. So when I made this vegan milk for second time then I could not stop myself to add flavor to this drink. Then I tried to make it little healthier by avoiding sugar in this drink. I used dates as a substitute for sugar.

The taste of this was really super delicious.
So do you like soy milk then you should definitely try this at home. It is very simple. You can even make tofu (soy paneer) from that milk at home.
Most motivated thing is that soy milk is very expensive if you want to directly buy it from the market. I used to buy 200 ml of flavored milk for approx Rs 20-25. Where as when I made this I just need to buy soybeans for Rs 24 and I got approx 2.5 litre soy milk.

So let’s make this vegan milk with vanilla flavored and dates sweetener.
How to make vanilla soy milk at home?
Wash soybeans and then soak it in water for approx 8-10 hours. Then strain it and drain soaked water and wash it again under running water.
Rub those soaked soybeans with your both hands and separate peels of those seeds. You just need to fill the bowl with water. Then separated peels will automatically start floating on the top. Just remove those peels.
Now grind those soybeans and pour three times water. That means you are using one cup soybeans then pour 3 cups water. Mix all again
Boil boil the mixture over low to medium flame for 7-10 minutes and finally strain to obtain your soy milk.
Then grind handful seed less dates and soak those in water for 1-2 hours. Grind it to make smooth puree with 1/2 cup cups water. Strain it and pour dates extracted water into soy milk also add a few drops of vanilla essence.
Boil it over low flame for 5 minutes. Then serve it warm or chilled.
Vanilla soy milk recipe
- 1 cup soy milk
- 4 dates
- A few drops of vanilla essence
- 2 tablespoons water
- Soak seed less dates for 1-2 hours and then grind to make smooth puree of dates and then strain it to collect dates extracted water
- Now add dates extracted water & vanilla essence to soy milk
- Boil that soy milk over a low flame for 5 minutes & serve it
