Is it a soup? If you are from Bengal then you will definitely think so. This green mango soup is very popular in Bengal and known as aamer ambol. Here aam means mango and ambol refers to something which is sour in taste. This green mango soup is similar to kancha ameer chutney but the only difference is, it is not as thicker as kancha ameer chutney. A full bowl of green mango soup is magical during summer days. You can even have this is in a mug and sip while relaxing at home.
Mangoes & only mangoes
This soup will help you to protect yourself from heat during summer, not only that it is a very tasty drink too. Mango is a very famous summer fruit which is very juicy and India is the highest producer of mango in the world. It produces almost 42% of total production. Mangoes are popular for its mouth-watering flavor and sweet taste. From eight to eighty years old people, girls or boys, child or aged person, almost everybody likes mangoes. Perfectly ripe sweet mangoes are preferred to have directly whereas many people love to have mango shake instead of consuming directly. Many people also use ripe sweet mangoes to make some special traditional sweet dishes.

But green mangoes or unripe mangoes are used as vegetables. As you know that such green mangoes are not sweet in taste rather those are super sour in taste but still people love this because of its mouthwatering flavor. It is different and unique.
Green mango soup? What is it?
You can enjoy this green mango soup as any other normal soup, at the same time you can enjoy this with plain rice or roti. In northern India, a similar dish made with green mango is also known as ambi ki sabzi whereas in Bengal it is known as aamer chutney or kancha aamer ambol. Though there are some differences in aamer chutney and kancha aamer ambol but often used as similar things. In Bengal, aamer chutney is normally referred to understand something little sweeter in taste and thicker as said earlier whereas kancha aamer ambol is less sweet in taste. Many people also add dry fruits to that aamer chutney and use fenugreek, mustard, cumin, fennel, black cumin (kalonji) seeds for tempering.
Green mango soup, summer special aamer ambol
This green mango soup is not so difficult to make as some other soups. It takes less than thirty minutes and it will be ready to serve. Here mustard seeds, fennel and sun-dried red chillies are used for tempering. Pinches of turmeric powder are used to bring yellowish color in this soup. All green mangoes are not equally sour in taste and every people will not prefer the equal sour taste. So add sugar according to your taste.
Green mango soup recipe (aamer ambol)
- Green mango / kancha aam - 1 medium size, cut into small pieces
- Mustard seeds / sarso dana - 2 tsp
- Fennel seeds / saunf - 1 tsp
- Turmeric powder / haldi - pinch of
- Sugar - 1 tbsp
- Dried red chili / sukha lal mirch - 2 pieces, whole
- Salt - as needed
- Oil - 1 tbsp
- Water - 2.5 cups
- Cut a medium size green mango into small pieces and remove its its seed
- Now heat oil in a cooking pot and add mustard seeds and fennel and let those start cracking
- Add sun dried red chilies to that cooking pot and also add small green mango pieces
- Saute all small green mango pieces in oil and other spices, spread some pinches of turmeric powder too
- Now pour water and boil green mango pieces in water for 10 minutes, mash some pieces of green mango pieces by using hand masher
- After that add sugar and salt as needed and again boil for another 5 minutes
