All of us going through a phase when all of us facing difficulties to live a normal life. We can not go outside without any reason. People are getting bored, frustrated & panicked. Nobody knows when things will be normal. After spending the horrible year 2020, nobody even thought of such a situation even in 2021. Many people are doing exercise & yoga and changing food habit to increase immunity. In this situation, there are some foods that can bring a smile on your face during this pandemic due to COVID19. Nowadays people are less interested to spend time in cooking & buying vegetables. But still, there are some awesome foods that can be prepared within a jiffy and most people will enjoy such foods.
You just need to make two dishes for your complete meal. But still meal will be delicious and only a few ingredients are needed to make those dishes.
Rajma chawal
It is a common meal in Northern Indian states. Almost everybody loves this meal for lunch or even dinner. It is full of protein & various minerals. So it is not just delicious but also very nutritious. it can be prepared within 30 minutes. But you need to plan one night prior for having this meal because rajma (kidney beans) should be soaked in water for overnight or more.
Aam ras & poori
Di you ever try aamras & poori. It is very delicious. It is very popular in Maharashtra & its neighbouring states. You just need to prepare pooris. For making aam ras you just to need put all ingredients into a blender and blend to make a smooth puree. I tried this awesome meal for lunch as well as dinner too. During the summer season, when mouthwatering mangoes are available in the market, people often try this for breakfast too.
Kadhi chawal
It is another popular North Indian dish. Only a few ingredients are needed to make this kadhi chawal. If you are not in hurry then you can add pakodas to the kadhi then it will be more enjoyable. As it prepared with curd & besan (gram flour), so it contains a good amount of protein & other nutritional values.
Soft idli & chatni
It is a popular South Indian breakfast as well as a meal. You can prepare various types of chutneys to have those soft idlis. Once you prepare batter for idli then it becomes very easy. Many people also prefer rava idli because it does not need to soak in water overnight. That is why rava idli also known as instant idli.
Panta bhaat
Panta bhaat is a popular meal in eastern Indian states. It is nothing but the semi fermented rice. It is very delicous & nutritious. People add lemon juice, kasundi (mustard sauce), red chillies to panta bhat. You can also have various fried items (aloo bhaja, fried fish, kumro bhaja etc) along with the panta bhaat.
Basanti pulao & dum aloo
Basanti pulao is a Bengali style yellow coloured pulao. It is a traditional dish that is prepared for puja bhog or any special day menu like annaprason ceremony, birthday ceremony, marriage ceremony etc. It is also easy to make dish. That is why I keep it on this list. It is often served with dum aloo.
Sambar & rice
I love sambar a lot with idli as well as dosa. But many people enjoy sambar with plain rice. Did you ever try this? Do you love this combination? It is a simple meal & easy to prepare. You can add various seasonal vegetables to this dal. Drumstick/moringa/sajne is often added to this sambar.
Dosa & chatni, sambar
This is another very popular South Indian dish. But this dosa & sambar is enjoyed by almost every people across the country. It is also easily available in various parts across the country. I also love this. The batter for dosa is generally with dal & rice. But rava/semolina is often used to make instant dosa.
Khichdi
Though there are many people who like this throughout the year. But I love it when it is raining outside. Khichdi is popular in various parts of the country. The preparation of khichdi may differ from region to region. But the basic ingredients of this dish are the same. Rice & lentils are used to make this healthy dish. A plate of khichdi can bring a smile on your face during this pandemic situation to Covid19. Is this not true? What do you say khichdi lovers?
Momos
Momos are a popular food in North East region of India as well as regions near Nepal. But people across the country love this food. It is often consumed as a light meal in the evening. But people like me, love to have those momos for lunch as well as dinner too. I have tasted various types of momos like vegetable momo, paneer momo, egg momo, chicken momo. Did you ever try paneer momo? It is generally not available in West Bengal but you can easily get paneer momos in Delhi & its neighbouring states.
