Burani raita (Burhani raita) is a Mughlai dish and very much popular in Hyderabad. I have never seen this type of raita available in any other city in this country. I mean may be available but that too only at a very few selective restaurants. But I do not know which are those selective restaurants because I never noticed this in any other city.
Burani raita & Hyderabadi biryani
I only had such Burani raita (Burhani raita) at a restaurant (that too in Hyderabad) once in my life till now. I just ordered a plate of spicy Hyderabadi biryani and they gave burani raita along with that biryani. Biryani was huge in quantity. No normal person can eat that much at a time. But I did not give up. I took time and ordered another bowl of burani raita and finally I finished that after struggling for approx half an hour. I could not finish that biryani without raita. That time I came to know that it was burani raita (Burhani raita). I asked that restaurant boy what was the speciality of that raita. He said that garlic paste was added and the rest was their magic. “hmmmm” I replied.

It is even not easily available at any restaurant apart from Hyderabad and some other cities in Andhra & Telangana. Burani raita recipe (Burhani raita preparation)
- 1 cup yogurt/curd/dahi
- 1.5 tablespoon full cream milk, optional
- 1.5 teaspoon garlic powder
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala, optional
- ½ tsp red chilli powder
- ½ tsp black pepper powder
- Black salt/rock salt as needed
- Take each ingredient in a large bowl and whisk all
- Keep this in a refrigerator to settle, then add pinches of cumin powder & red chilli powder and serve
