Awesome Thai salad with chopped fresh vegetables

It was an excellent day when I accidentally prepared this awesome Thai salad with available fresh vegetables. An accidental Thai salad with fresh vegetables that too with a special peanut-based Thai style dressing. Sounds yummy? This was the first time when I made such Thai salad with a lot of peanuts but the fun part is that it was so delicious and the taste of this salad forced me to share this here so that I can use it in future and you can also read this. 

You may be surprised at the word accidental. Is it? I mentioned this accidental because I never planned this to make for dinner. But as there is a sudden change in dinner menu by force inclusion of rice-fry because of leftover rice in our refrigerator. Rice-fry? What is that? Is it fried rice? Hmmm, actually, rice-fry is different from fried rice, that most of you definitely know. But today I will not talk about that because I just want to share that awesome Thai salad with fresh chopped vegetables.

So I wanted to make a good vegetable salad what won’t be a dry type. So I thought of this Thai style salad dressing with extra peanuts paste would certainly work best. It was an attempt to bring each kind of taste in this salad. Though soy sauce is often added to Thai salad as per my knowledge as I am not an expert, I just want to make something good & sometimes special what usually cost higher if I want to try outside so regularly. Okay, anyway the point is, here soy sauce is not added. As I thought soy sauce won’t work with veg rice-fry.

This salad recipe should not take a long time but as I preferred to soak peanuts in vinegar-water, so it took 4 hours. If I would skip this step then it would take hardly 8 to 10 minutes. But finally, it was prepared then it did not disappoint me. I did not need any separate dish for gravy, this awesome Thai salad with chopped fresh vegetables was perfect with vegetable rice-fry. It was sweet, sour & hot in taste. It was really truly said awesome Thai salad.

Serves: 2-3 people
Ingredients
For dressing
  • Peanut - ½ cup
  • Vinegar - 2 tsp
  • Sugar - 1 tsp
  • Honey - 1 tsp
  • Lime juice - 1.5 tsp
  • Red chilli flakes - 2 tsp
  • Olive oil - 2 tsp
  • Salt - pinch of
  • Coriander leaves - ¼ cup, chopped
  • Water - 2-5 tsp
For salad
  • Cucumber - 1 large, chopped
  • Carrot - ½ cup, chopped
Instructions
  1. Take peanuts in a bowl and add 2 tsp vinegar and a few teaspoon water to it, let peanut soak in vinegar-water solution for 3-4 hours
  2. Now remove skin from those peanuts and put those in blender
  3. Add all other ingredients & water in blender and make smooth puree, add more water if needed
  4. Now in a large bowl take chopped cucumber & carrot and spread salad dressing over it and mix properly before serving
