Eggs (Anda in Hindi) are popular food across the globe. It is used to make various delicious dishes in different cuisines. But this dhaba style anda curry is so special. It is simply unbeatable. The gravy of this dish is very rich & flavorful which is normally served at roadside dhaba on highways. Though such spicy & rich gravy is not prepared regularly at home. But everybody will enjoy such dhaba style egg gravy occasionally.
I had various egg based dishes during the initial days of Covid19 pandemic situation because everybody wanted to avoid going outside for shopping during those days. So we used to store eggs in the refrigerator. I started growing more vegetables & less flowering plants during those days. I developed a beautiful kitchen garden for this purpose. During this pandemic situation, I had this awesome anda curry several times. The taste & texture of the egg gravy is almost similar to dhaba style rich, spicy & flavorful. I love this dhaba style anda curry a lot.
But things turn into worse when there are some reports of spreading bird flu in some parts of India. So we had to stop eating poultry products. We stopped making any egg-based items for several weeks. But nowadays people started eating poultry products. That is why when I wanted to have egg gravy again then we decided to make this mouthwatering dhaba style anda curry. So this was the new beginning of egg based dishes.
Though it looks very challenging to make but actually it is not true. The preparation of this dish is effortless, and anybody can make it at home.

Anda curry (Dhaba style egg gravy) recipe
- 4 eggs
- 2 medium size potatoes (peel its skin and cut into pieces)
- 2 tomatoes, finely chopped
- 2 onions, paste
- 1.5 teaspoons cumin seeds
- 2.5 teaspoons ginger paste
- 1.5 teaspoons garlic paste
- 2 teaspoons red chilli powder
- 2 teaspoons turmeric (haldi) powder
- 1.5 teaspoons garam masala
- ½ teaspoon jiaphal (nutmeg) powder
- 2 bay leaves (tej patta)
- 2.5 tablespoons any refined oil
- Water as needed
- Boil eggs in a pot and remove its shell
- Sprinkle turmeric powder & salt over potato pieces
- Heat oil in a cooking pot and fry potato pieces, take all fried potato in a separate pot
- Also fry boiled eggs and take those in a separate pot
- Now add cumin seeds & bay leaves and saute till nice aroma comes out
- Then add chopped onion, ginger paste & garlic paste one by one
- Sprinkle salt & cook those over medium flame till those turns into light brown color
- Now add chopped tomatoes too and cook till spices releases oil
- Then aad red chilli powder, turmeric powder, garam masala, jaiphal powder and mix with all spices
- Cook all for another 2 minutes and pour 1.5 cups of water and stir too mix spices with water
- Now all it to start boiling, add fried potatoes and cook till water reduced to half in quantity
- Now add fried boiled eggs and cook for another two minutes and switch off fire
