Sabudana vada? That too with curd, it may be a new food to many people across the world. But this is very popular breakfast food in Maharashtra, India. I don’t know why it is not so popular in other parts of the country but it is actually one of most preferred snack or breakfast food in Maharashtra. People like to have this vada with yogurt or cilantro-mint chatni.
If you accidentally landed on this page then this may be a new food to you but if you are actually for this sabudana vada then you definitely aware about this food and you have definitely tried this food somewhere. When I first time tried this food in Mumbai I found this item as taste breaker, haha. I mean this sabudana vada served with yogurt will simply break your common breakfast routine bread & butter -sandwich-corn flakes, paratha (in case you are from north India), idli-dosa-medu vada (in case you are from south India). Is it not correct? I mean you are having all those similar foods in breakfast so regularly then you will definitely like to try something different. In such case, you should go for sabudana vada with yogurt chatni (or cilantro mint chatni if you wish). I personally liked this with plain yogurt or curd based chatni (cashew, peanut, chilli, honey & curd are blended together to make such delicious chatni).
Though basically it is considered as breakfast foods but some people even like this as snack and love to have this in evening with tea. I find Maharashtrian food actually very desi & simple, you can find a lot of varieties in their breakfast or even snacks.The list of such foods is quite long – poha, sadudana khichdi, sabudana vada, usal pav, misal pav, vada pav, pav bhaji, bhaji pav and many others.
Being a Bengali when first time, I was served this sabudana vada with plain yogurt, I said yakk, sabudana vada, I used to love this when I was three-four years old but after that, I use to have sabudana (tapioca pearls) only as prasad during puja or festival. I had no idea about such food what can exist on this earth. But when I finally tired, I just liked it. I came to know the recipe of that food and tried to make that this, did some experiments on that dish too. I tried this with plain curd, curd chatni, coriander – mint chatni and even with schezwan chatni but I liked it with curd based chatni & plain chatni too. North Indian food lovers may prefer this with coriander leaves & mint chatni as that chatni is often served with various north Indian foods.
So did you ever try this food? I find both sabudana khichdi and sabudana vada are good. Particularly when sabudana khichdi served with fresh grated coconut then it is just awesome and sabudana khichdi is also less oily as compared to vada. So I would suggest to try both foods based on tapioca pearl based foods available on this earth, haha. I do not know whether there is any other tapioca pearl based food available in this country or anywhere in this world. If there is any then please share it with me and other readers who are eager to know about this.
Okay, now this was all about the sabudana vada based story but I would also like to hear something about your side too.
Sabudana vada recipe
- Tapioca pearls / sabudana - 200 gm
- Potatoes - 3 medium size
- Peanuts/moongphali - ½ cup
- Sugar - 2 tsp
- Green chillies - 3 pieces
- Cumin/jeera - 3 tsp, whole
- Salt - as needed
- Oil - as needed
- Curd - ½ cup
- Cashew nuts - 2 tsp, paste
- Peanuts / moongphali - ½ tbsp, crushed
- Green chillies - 2 pieces
- Honey - 2 tsp
- Salt - as needed
- Boil potatoes and mashed (use pressure cooker for faster cooking)
- Roast peanuts till black spots will come on peanuts, then remove it from fire and wait till it becomes cool, finally grind it to breaks peanuts into very small pieces
- Add all ingredients to make sabudana vada (sabudana, mashed potatoes, peanuts, sugar, green chillies, cumin, salt)
- Make round balls with that and finally press those to make flat shaped
- Now heat oil in a cooking pot and deep fry those vada till both sides of vada become light brown
- Now your sabudana vada is ready
- Then blend all ingredients for making curd based sauce (curd, cashew nuts, peanuts, green chillies, honey, salt)
